Coeliac disease

Coeliac disease is an autoimmune disease that attacks the small intestine due to the presence of gluten, for which a gluten-free diet is the only medically-accepted treatment. The disease affects an estimated 1% of adults worldwide and appears to be on the increase, but because of the rare occurrence of symptoms, it is believed only 5-10 percent of cases are diagnosed. The amount of tolerable gluten varies among people with coeliac disease. Although there is no evidence to suggest a single definitive threshold, a daily gluten intake of less than 10 mg is unlikely to cause significant histological abnormalities.

Non-celiac gluten sensitivity

Although gluten sensitivity in non-celiac individuals has been shown not to exist in clinical tests, it has been asserted that some people may be sensitive to gluten but do not have celiac disease and may feel better on a diet with less gluten. Self-reported nonceliac gluten sensitivity (NCGS) is becoming more common than those with diagnosed celiac disease. NCGS is not fully understood because it does not have a set of specific symptoms and the research on it is very limited.  In either case, for those without celiac disease or gluten sensitivity, the diet may be unnecessary.

As a fad diet

Gluten-free fad diets are popular and endorsed by celebrities such as Miley Cyrus. The book Wheat Belly which refers to wheat as a “chronic poison” became a New York Times bestseller within a month of publication in 2011. People buy gluten-free food "because they think it will help them lose weight, because they seem to feel better or because they mistakenly believe they are sensitive to gluten." However the gluten-free diet is not recommended as a means to eat healthier, lose weight, or diagnose one's own symptoms.

Gluten Free Diet details with Baking Powder Biscuit Recipe

Big, Fluffy, Gluten-Free Buttermilk Biscuits

The type of light & fluffy gluten-free biscuit you can serve for dinner, brunch, or breakfast, topped with cheese and jam or just a dab of butter.
Ingredients
  • 1 1/4 cups brown rice flour
  • 1/4 cup tapioca starch
  • 3 teaspoons xanthan gum (UPDATE - it works with 2 tsp, but I find 3 works best)
  • 2 teaspoons gluten Free baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 cup cold butter, cut into chunks
  • 2 large eggs
  • 1/3 cup buttermilk
  • milk for brushing the tops of biscuits before baking, optional
Instructions
  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper, and sprinkle with some brown rice flour. Set aside.
  2. In the bowl of a food processor, combine all the dry ingredients. Pulse to combine. (If you don't have a food processor, combine all dry ingredients in a medium size mixing bowl.)
  3. Add the butter and pulse until the butter is the size of a lentil/pea. (Or, use a pastry blender to cut the butter into the dry ingredients, being sure to work quickly, because you want your butter to stay cold).
  4. Add the eggs and buttermilk, and run the food processor until the dough comes together in a ball. (Alternately, you can use a wooden spoon and stir until the dough comes together).
  5. Turn dough out onto the parchment lined baking sheet, and flour your hands with more brown rice flour. Working quickly, pat the dough down into a square shape, approximately 10"x10", and 3/4-inch thick. Using a sharp knife, cut into 9 biscuits.
  6. Gently rearrange the biscuits so they are not touching and have room to grow while they are baking. Gently brush the tops of the biscuits with milk, and sprinkle with course salt (optional).
  7. Bake in preheated oven for 14-16 minutes, or until golden brown. Allow to cool for 5 minutes on a cooling rack before serving. Store remaining biscuits in an air-tight container.

Prosciutto-Wrapped Basil Shrimp

Ingredients

  •     20 large frozen peeled deveined shrimp, thawed
  •     1 tablespoon chopped fresh basil
  •     1 teaspoon extra-virgin olive oil
  •     1/2 teaspoon lemon zest
  •     1/2 teaspoon kosher salt
  •     1/4 teaspoon rеd pepper flakes
  •     1/8 teaspoon freshly ground black pepper
  •     10 (about 4 ounces) vеrу thin slices prosciutto
  •     Cooking spray
  •     8 lemon wedges, fоr serving

Preparation


1. Preheat broiler.

Cashew and Onion Pilau Recipe

    Ingredients

  •     2 tablespoons ghee
  •     2 rеd onions, halved, thinly sliced
  •     2 teaspoons yellow mustard seeds
  •     3/4 cup raw cashews
  •     1/4 cup natural flaked almonds
  •     1/4 cup shredded coconut
  •     3 cups basmati rice
  •     3 cardamom pods, bruised
  •     1 cinnamon stick
  •     8 fresh curry leaves
    Method

    Step 1

    Melt ghee in a medium heavy-based saucepan оvеr medium heat. Add onion. Cook, stirring occasionally, fоr 10 tо 12 minutes оr until onion hаѕ softened but nоt browned. Add mustard seeds. Cook, stirring, fоr 2 minutes оr until seeds start tо pop. Transfer tо a heatproof bowl.

    Step 2

    Add cashews, almonds аnd coconut tо pan. Cook, shaking pan occasionally, fоr 5 minutes оr until coconut iѕ golden. Transfer tо onion mixture. Cover tо kеер warm.
